Gluten Free Banana Bread

This easy banana bread recipe is one of my recently favourites ! After testing out several recipes, I finally found one that I love.
It's wonderfully moist and has no butter and refined sugar.
It's a perfect healthy "treat".

Ingredients;
60 gr. coconut sugar
50 gr. coconut oil
3 ripest bananas
2 eggs
80 gr. almond flour
80 gr. gluten-free oat flour
40 gr. buckwheat flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
3 Tbsp Chia seed
1 tsp vanilla
Steps:
1)Pre-heat the oven to 180°C/350°F and grease or line a loaf tin.
2)Peel the bananas and mash using a fork in a small mixing bowl, set aside.
3)In a large bowl whisk the melted coconut oil and coconut sugar together.
4)Add the eggs, vanilla and whisk until smooth.
5)Add the mashed bananas.
6)In a medium bowl, whisk together the almond flour, gluten-free oat flour, buckwheat flour, cinnamon, baking powder, baking soda, cinnamon, Chia seed and salt. Set aside.
7)Add flour mixture to egg mixture; mix until all ingredients are combined.
8)Transfer this to a greased 9 inch loaf pan. Greased it with coconut butter, it tastes better than vegetable oil. Trust me!
9)Bake in the oven at for 30-35 minutes or until a toothpick comes out clean. Remove from the oven and allow to cool on a cooling rack before slicing.
Slice and enjoy!
The best thing about this recipe is that it’s pretty adaptable. You can use olive oil instead of the coconut butter or coconut flour instead of a buckwheat flour. I always change some things, It depends on what is inside my cupboard at that moment. You should always use your creativity, that makes you happy!
For the best result, use the ripest banana. It's very yellow with a lot of brown spot on it.
Coconut sugar has a sweetness that is similar to refined sugar and much healthier. Which contains some of natural vitamins, minerals and a fibre.
